Pinot Noir (2014)
This wine shows notes of dried cranberry, mushroom, and cocoa. The palate offers a core of soft tightly wound tannins that reveal flavors of leather, cranberry, and shaved milk chocolate. The finish is elegant and restrained.
Specifications - Pinot Noir (2014)
The grapes for this wine were sustainably farmed on our Northville farm. The fruit is picked at optimal ripeness for the vintage by hand. The clusters are then destemmed, the must chilled, and put into 1-ton bins. The fruit is then permitted a 48-hour cold soak prior to being inoculated with yeast. Each bin is fermented with a different yeast strain and when dry the bins are drained and pressed together. There is a separation of free run and press fraction. Only free run is used in the production of this wine. The wine is then aged in a mixture of French oak puncheons and barriques. There is approximated 15 new oak used in the production of this wine. The balance used is 2 years and older.
