Estate Reserve Semillon
The grapes were machine harvested, crushed, destemmed, and pressed. The free run and press fractions were separated and double settled. The wine was fermented to dryness using EC1118 and aged sur-lie for 15 months and stirred throughout the barrel maturation. Originally the wine was intended to be aged for 9-months, but it was decided at 9 months that the wine should be aged longer on the lees to develop additional creaminess to balance out the austere acidity.
