NYS Riesling (2010)
On the nose ginger, granny smith apple, lemon rind and the distinctive Riesling petrol character allow a faint gardenia floral aroma to peak your interest. On the palate the bright acidity, the sweetness of kefir lime, and white peach are underlined by a slate quality indicate that while this wine is refreshing now it is going to age and age well. The grapes were hand sorted & inspected to ensure that only the healthiest & ripest grapes were chosen for this wine. After a light whole cluster pressing the grapes were fermented at very low temperatures to keep fresh aromas. The ferment was “shocked” at 3% residual sugar by dropping the temperature suddenly and severely to keep the natural grape sugar to balance the acidity.
