Specifications - NYS Riesling (2009-2014)
The grapes were hand harvested and gently whole cluster pressed to release the free-run juice. The juice was then settled for several days, racked, and innoculated with a German yeast strain. Bentonite was added during fermentation to minimize the handling of the wine. The cool, long, ferment lasted almost 4-weeks when it was stopped to leave 23g/L residual sugar. Careful measures were taken in the winery to minimize contact with oxygen.
