Specifications - Malbec (2007)
The grapes were hand-picked, destemmed & crushed, followed by a 4 day cold soak at 48°F. The fermentation lasted 8 days using F15 yeast with a peak temperature of 95 °F & a total maceration of 32 days before the grapes were gently pressed. To extract the most flavors & the most color, the juice was gently pumped over 3-4 times a day. The wine was racked a total of 7 times during barrel aging.
