Specifications - Syrah (2007)
The grapes were hand-picked, hand-sorted, destemmed & crushed, followed by a 4 day cold soak at 48°F. The Co-fermentation of Syrah and Viognier(Classic blend of Cote Rotie) went on for 8 days using ICV-D254 yeast with a peak temperature of 88 °F & a total maceration of 24 days before the grapes were gently pressed. To extract the most flavors & the most color, the juice was gently pumped over 3-4 times a day. The wine was racked a total of 5 times during barrel aging.
