Specifications - Malbec (2010)
The grapes for our 2010 Malbec were hand harvested and destemmed. The must was chilled to 52°Farenheit for a 48 hours cold soak. The must was then heated and inoculated with BM45 Yeast and the fermentation ensued at 94° Farenheit. When primary fermentation was finished the wine macerated on the skins for 3-weeks helping to develop rich tannin structure. The wine was then pressed off the skins and allowed to age for 19 months and racked a total of 7times. This wine was bottled unfined and unfiltered.
