42% Merlot, 39% Cabernet Sauvignon, 9% Cabernet Franc, 5% Malbec, 5% Petit Verdot. The varietals were individually crushed, followed by a 3 day cold soak at 50°F. The fermentations continued for 7-10 days with peak temperatures of 94°F. To extract the most flavors & color, the juice was gently pumped over 3 times a day. Maceration (skin contact) lasted from 21 to a total of 28days before the grapes were gently pressed. The wine was racked a total of 6 times during barrel aging.
