The fruit for this wine was sourced from our certified sustainable farm and hand harvested. We leave a small amount of Viognier out in the vineyard to be harvested at the time of our Syrah harvest. These are co-harvested, co-destemmed through a Euroselect, and then co-fermented using a Rhone derived yeast strain. The fruit is cold soaked for 48-hours prior to beginning fermentation. The wine was pressed off of the skins in 14-days and then allowed to age for 12 months prior to bottling. The wine was racked a total of 6 times post pressing.
